We have been making almond milk like crazy lately, but we totally hate food waste – who doesn’t? One thing that’s a bummer about the almond milk process is that we are left with a whole pile of almond pulp. Rather than throwing it away, we are looking for new ways to use this product that is full of healthy fats. That’s where these Almond Energy Bites come in! We used the pulp from our Rich & Creamy Toasted Coconut Almond Milk to create these super simple, filling and delicious bites.
Here’s what you’ll need:
1 1/2 cup wet almond milk pulp – I used all of our pulp from this recipe, you can also use almond flour
7 large dates – pits removed
1 cup nut butter
2 tbs raw honey
Directions:
- Blend together ingredients in food processor or blender until dough forms
- Form into 30 bite-sized balls
