These Chocolate Espresso Donuts are decadent and indulgent, featuring rich cocoa powder, smooth semi-sweet chocolate, and intense espresso powder.

This one is dedicated to the truest of chocolate lovers! Just a pinch of espresso powder deepens the dark chocolate flavor we all crave. These tender and melt-in-your-mouth doughnuts are baked, not fried, and completely grain-free. Let’s get cooking!

Ingredients

1 cup almond flour
½ cup cocoa powder
½ cup dark chocolate chips
1 tbsp espresso powder
½ cup erythritol (raw cane sugar is okay too)
3 eggs
4 tbsp coconut oil
¼ cup oat milk
1 tsp baking powder
¼ tsp xanthan gum

 

Directions

  1. Preheat oven to 350F.
  2. Melt coconut oil if it’s completely solid.
  3. In a large mixing bowl, combine almond flour, cocoa powder, dark chocolate chips, espresso powder, erythritol or cane sugar, baking powder, and xanthan gum.
    1. Note: if you don’t have xanthan gum or don’t want to use it, I recommend adding an extra egg to account for the structural importance of this ingredient!
  4. In a separate bowl, whisk eggs until foamy. Add oat milk and coconut oil and mix.
  5. Add wet ingredients to the dry mixture and stir until just combined, being careful not to over mix. Lumps are okay!
  6. Add batter into greased doughnut molds and bake for 20-23 minutes.
  7. Remove from oven and allow to cool completely before removing from the molds and enjoying your chocolate espresso doughnuts!
