Chocolate Peanut Butter Puffed Rice Bars… whoa… that’s a mouth full. I know it’s not a super creative recipe title, but to be honest, I am going literal with this one because these bars are so simple to make that you could practically make them without this recipe just by looking at the title of this blog. These bars were inspired by a late night craving for Special Kay Bars. Something sweet and salty, chewy and decadent. Anyway, I will make it easy for you and dive right in.

 

Here’s what you’ll need…

Bars

4 cups puffed rice

1/2 cup raw honey

1/2 cup peanut butter

Drizzle

1/4 cup dark chocolate chips

1 Tbs coconut oil (optional)

 

Directions:

  1. In a large bowl, combine raw honey and peanut butter in a mixing bowl and melt for 10-15 seconds, or until it reaches a drizzle-y consistency
  2. Fold in puffed rice cereal until puffed rice is nicely coated in the sticky mixture, and the mixture forms into one large malleable mass
  3. Place this mixture into an 8×8 inch pan lined with parchment paper and press into the dish with your hands to flatten into the pan
  4. Chill in refrigerator or freezer
  5. Prepare your chocolate drizzle by melting the dark chocolate chips and coconut oil in a small dish in the microwave, stirring every 10 seconds until it becomes nice and drizzly, or over a double boiler
  6. Remove puffed rice bars from freezer, drizzle with the chocolate, and return it to the freezer to chill for an additional ten minutes before cutting into bars
