
Lunch or dinner is served in 15 minutes with these Creamy Tomato & Garlic Butter Beans with Toast.
Ingredients
2 tbsp olive oil
½ white onion, diced
1 cup halved cherry tomatoes
4 cloves garlic, thinly sliced
2 tbsp tomato paste
1 15 oz can butter beans, drained and rinsed
½ cup vegetable broth
2 oz parmesan cheese
1 tsp red pepper flakes
1 tsp salt
Directions:
Dice the onion, halve the cherry tomatoes, thinly slice the garlic, and drain and rinse the butter beans.
Preheat a saucepan over medium heat. Add olive oil, onions, tomatoes, and a pinch of salt and red pepper flakes. Cook until the onions are translucent and the tomatoes have softened, about 6-8 minutes. Add the garlic, and cook until fragrant and softened, about 2 minutes. Add the tomato paste, and cook, stirring frequently until darkened in color, about 2-3 minutes.
Add the beans and vegetable broth, and increase the heat to bring the mixture to a steady simmer. Once simmering, grate the parmesan cheese into the mixture, and stir to melt. Adjust seasoning to taste.
Garnish with additional red pepper flakes, and serve hot over toasted sourdough or your favorite hearty bread.
