
Let’s make Greek Smashburger Tacos. I promise they’ll be on your menu all summer long! I developed this recipe after returning from a trip to Greece when I was craving meals full of fresh flavors that I could easily incorporate into my weekly meal rotation. I’ve been making these Greek Smashburger Tacos on repeat ever since!
Ingredients
For Assembly
10 tortillas
Greek Salad
½ red onion, diced
2 roma tomato, diced
2 cup cucumber, diced
½ cup crumbled feta cheese
2 tbsp olive oil
2 tbsp lemon juice
1 tsp oregano
Pinch sea salt
Chicken Smashburger
2 lb ground chicken
1 medium shallot, finely chopped
⅓ cup fresh mint and parsley, finely chopped
4 garlic cloves, minced
¾ tsp salt
½ tsp pepper, Italian seasoning, red pepper flakes
Tzatziki
1 cup plain Greek yogurt
2 tbsp fresh dill roughly chopped
2 cloves garlic
½ tsp salt
½ lemon, juiced
½ cup grated cucumber
1 tbsp olive oil
Directions:
Prepare the Greek salad. Dice the red onion, tomato, and cucumber. In a mixing bowl, combine the onion, tomato, cucumber, feta, olive oil, lemon juice, oregano, and sea salt. Set aside.
Prepare the tzatziki. In a food processor or blender, combine the Greek yogurt, dill, remaining minced garlic, ½ teaspoon salt, lemon juice, and grated cucumber until combined. Drizzle in the olive oil and blend until just combined.
Prepare the smash burgers. Finely chop the shallot, mint, and parsley, and mince the garlic. In a mixing bowl, combine the ground chicken, shallot, herbs, garlic, salt, pepper, Italian seasoning, and red pepper flakes. Mix with your hands until well-mixed. Spread the mixture onto the tortillas.
Preheat a nonstick skillet or seasoned cast iron skillet over medium heat. Place the tortilla, burger-side down, and sear until the chicken is cooked through and browned, flip, and toast the tortilla. Remove from the heat, and repeat with the remaining tortillas.
Assemble the smashburger by topping with the Greek salad and tzatziki. Enjoy.
