Need a quick breakfast or nourishing snack? One may typically reach for granola or trail mix expecting to find a healthy option, but have you ever read an ingredient label on the pre-packaged stuff? It’s often loaded with junk and super high in sugar – which is fine if you’re using it as an energy pick-me-up during a long hike. We like to make our own because it’s cheaper, super simple and we can limit the ingredients and sugar content (and we personally think ours tastes better (; ).
Here’s what you’ll need:
1 cup gluten free rolled oats
1/2 cup sliced almonds
1/2 cup unsweetened coconut flakes
1/2 tsp cinnamon
pinch of sea salt
1 Tbs coconut oil
3 tsp maple syrup
Directions:
- Preheat oven to 300F
- Combine oats, almonds, coconut flakes, cinnamon, and salt in a large bowl
- In a small bowl, mix coconut oil and maple syrup
- Pour the mixture over dry ingredients and stir until well coated
- Spread granola onto baking sheet lined with parchment paper
- Bake for 15-20 minutes, stirring after about ten minutes
- Remove from oven once the granola is golden
