This Creamy Chicken & Veggie Bake checks all of our boxes! We typically avoid pasta all together. Not because we are afraid of carbs, but because we eat intuitively, and pasta leaves us feeling bloated and gross. When we do choose to eat pasta, we reach for a brown rice pasta or Banza, a chick-pea based pasta that is full of protein and fiber. This one pan meal prep is super simple to make with impressive macronutrients to boot. Each serving packs a serious punch with nearly 30 grams of protein per serving that will keep you fueled all afternoon.
Here’s what you’ll need:
8 oz Banza rotini
2 lb chicken breast, cubed
2 cup chopped broccoli
3 small tomatoes, diced
2 cup 2% milk, or milk of choice
1 cup mozzarella
1 cup water
2 Tbs fresh basil, chopped
2 tsp salt
1 tsp pepper
1 tsp garlic powder
Directions:
- Preheat oven to 375F
- Combine all ingredients in a 9×13 inch glass baking dish and mix
- Bake for 35 minutes
