I love fresh lemon in the spring and summertime. It’s so refreshing and delicious, I can’t help myself! These Raw Lemon Bars are perfect for brightening up your day.

 

Here’s what you’ll need…

Crust

2 cup cashews

10 large dates, pits removed

1/4 cup coconut oil, melted

Glaze

1/4 cup coconut oil, melted

4 Tbs raw honey

1/2 lemon, juiced

1/2 tsp lemon zest

 

Directions:

  1. Blend cashews and dates in food processor until pea-sized pieces form
  2. Press the crust into an 8×8 inch square pan and chill in refrigerator
  3. In the meantime, combine all ingredients for the glaze and whisk until homogeneous mixture forms
  4. Pour the glaze over the chilled crust and return to refrigerator or freezer and allow to solidify before enjoying
  5. Store in the refrigerator – if they last that long 😉
