
Key Lime Pie is my mom’s favorite dessert. With Mother’s Day around the corner, I always like to treat her with a homemade meal featuring foods she loves – including a delicious dessert. These No Bake Key Lime Pie Bars are winners in my book and totally will impress my mom.
Here’s what you’ll need…
base
2 cup cashews, raw
10 dates
1/4 cup coconut oil, melted
filling
2 cup Greek yogurt, plain
1 cup almond milk
1 package gelatine
2 tbs raw honey
1/4 cup key lime juice
1/2 tsp zest of lime
Directions:
- blend the ingredients of the base together in a food processor until it forms into a sticky paste-like consistency
- press crust into an 8×8 inch pan, until an even layer covers the bottom
- in a small pot, bring almond milk to a boil
- add gelatine slowly by whisking
- continue stirring until it is completely dissolved
- remove from heat and add remaining liquid ingredients
- stir until homogeneous mixture forms
- pour over the crust and set in refrigerator for at least 2 hours
- slice into evenly-sized bars and enjoy
