Dig into these deliciously sweet and tangy No Bake Key Lime Pie Bars

Key Lime Pie is my mom’s favorite dessert. With Mother’s Day around the corner, I always like to treat her with a homemade meal featuring foods she loves – including a delicious dessert. These No Bake Key Lime Pie Bars are winners in my book and totally will impress my mom.

 

Here’s what you’ll need…

base

2 cup cashews, raw

10 dates

1/4 cup coconut oil, melted

filling

2 cup Greek yogurt, plain

1 cup almond milk

1 package gelatine

2 tbs raw honey

1/4 cup key lime juice

1/2 tsp zest of lime

 

Directions:

  1. blend the ingredients of the base together in a food processor until it forms into a sticky paste-like consistency
  2. press crust into an 8×8 inch pan, until an even layer covers the bottom
  3. in a small pot, bring almond milk to a boil
  4. add gelatine slowly by whisking
  5. continue stirring until it is completely dissolved
  6. remove from heat and add remaining liquid ingredients
  7. stir until homogeneous mixture forms
  8. pour over the crust and set in refrigerator for at least 2 hours
  9. slice into evenly-sized bars and enjoy
