
This Pickle Chicken Salad is the high-protein version of a picnic classic – with the addition of some serious pickle crunch.
I will be the first to admit that I’m not a huge fan of mayonnaise-heavy picnic foods. You won’t find me craving a macaroni salad or classic chicken salad when picnic season rolls around. You will often find me completely opting out of that genre (which is alarming as a midwesterner), but I do make exceptions here and there for the right recipe. This is one of them! This Pickle Chicken Salad has salty, briny pickle juice, fresh and crunchy mix-ins, and a creamy mustard dressing with just a hint of mayonnaise.
You will absolutely find this is my picnic basket every time.
Ingredients
½ cup plain Greek yogurt
2 Tbsp mayonnaise
2 Tbsp pickle juice
2 Tbsp stone ground mustard
½ tsp salt
Freshly cracked black pepper
4 cups shredded chicken
½ cup diced gherkins
⅓ cup diced red onion
2 ribs celery, diced
1 tablespoon chopped fresh dill
Directions:
1. Prepare the Pickle Chicken Salad. Whisk together the Greek yogurt, mayonnaise, pickle juice, mustard, salt and pepper. Fold in the shredded chicken, pickles, red onion, celery, and fresh dill.
2. Enjoy in a sandwich, wrap, or with crackers within 4 days.
Notes:
- store the remaining pickle chicken salad in an airtight container in the refrigerator, and enjoy within four days
- opt for any gherkin for best results. These babies offer better crunch than other pickles.
- Opt for rotisserie chicken if you don’t feel like prepping your own shredded chicken
- If you do opt for shredded chicken, I recommend shredded the chicken with a stand mixer or electic mixer until it’s super fine for best results
