That’s it. That’s how many calories are in each of these Pumpkin Spice Macaroons. These little babies are sweet, delicate and melt-in-your mouth good. You may just eat the whole batch in one sitting. Here’s what you’ll need:
4 large egg whites
1 Tbs pumkin puree
3 Tbs stevia
1/4 tsp cream of tartar
1/4 tsp vanilla extract
1/2 tsp pumpkin pie spice
Directions:
- Preheat oven to 200 F
- Mix eggs with electric mixer until foamy
- Add cream of tartar, pumpkin pie spice and vanilla
- Continue whipping until soft peaks form, be careful not to overbeat the egg whites
- Add one tablespoon of stevia and beat just enough so that the stevia is distributed evenly
- Repeat with remaining two tablespoons
- Once the stevia is added, beat mixture until stiff or near stiff peaks form
- Gently fold in the pumpkin puree
- Place on cookie sheet lined with parchment paper with pastry bag or by dropping small spoonfuls of the mixture
- Bake for one hour
