That’s it. That’s how many calories are in each of these Pumpkin Spice Macaroons. These little babies are sweet, delicate and melt-in-your mouth good. You may just eat the whole batch in one sitting. Go ahead – we won’t judge you. Now you can get your Pumpkin Spice fix on the OM-Approved, clean eating way.

 

Here’s what you’ll need:

4 large egg whites
1 Tbs pumkin puree
3 Tbs stevia
1/4 tsp cream of tartar
1/4 tsp vanilla extract
1/2 tsp pumpkin pie spice

 

Directions:

  1. Preheat oven to 200 F
  2. Mix eggs with electric mixer until foamy
  3. Add cream of tartar, pumpkin pie spice and vanilla
  4. Continue whipping until soft peaks form, be careful not to overbeat the egg whites
  5. Add one tablespoon of stevia and beat just enough so that the stevia is distributed evenly
  6. Repeat with remaining two tablespoons
  7. Once the stevia is added, beat mixture until stiff or near stiff peaks form
  8. Gently fold in the pumpkin puree
  9. Place on cookie sheet lined with parchment paper with pastry bag or by dropping small spoonfuls of the mixture
  10. Bake for one hour
  11. Enjoy as many as you like… because it’s only 4 calories!
