This is no average dip. This Caramelized Onion Dip is not just delicious, but it's also pretty dang good for you! It's loaded with sweet and punchy onion flavor in every bite, and it's carried by protein-packed, probiotic-rich Greek yogurt. I highly recommend digging into this with fresh veggies to offset that tangy onion flavor. Perhaps you'd prefer digging in with a salty potato chip! To each their own.

Ingredients
1small white onionabout 2 cup sliced
2tbspolive oil
3clovesfresh garlicminced
16ozplain Greek yogurt
1tsponion salt
¼tspsaltplus a pinch for onions
Instructions
Preheat a well-seasoned cast iron pan to medium-low heat with olive oil.
Prepare onions by slicing them thinly from root to tip to create layers of rings. Separate the rings by hand.
Once cast iron is hot, add onions and a pinch of salt and allow them to sweat and cook slowly. Stirring occasionally, allow onions to caramelize and darken in color, about 25-30 minutes.
Note: Don’t rush the caramelization, or your onions will char and get crunchy!
Once onions are caramelized, add garlic and allow to soften and cook for 2-3 additional minutes.
Remove onions and garlic from the cast iron and allow to cool to room temperature.
Add Greek yogurt, onion salt, salt, and caramelized onions and garlic to a bowl and mix thoroughly.
