These Carrot Cake Cookies are not your average cookie. Grain-free, and sweetened with maple syrup, these chewy cookies are loaded with shredded carrots, golden raisins, and walnuts in every single bite. They're chewy, diverse in texture, and packed with nourishing and satisfying ingredients.

Ingredients
½cupalmond flour
½cuprolled oats
2eggs
¼cupmaple syrup
⅓cupchopped walnuts
1cupshredded carrots
½cupgolden raisins
1tspcinnamon
¼tspnutmeg
Instructions
Preheat the oven to 350F.
Combine all ingredients until a messy dough forms.
Spoon about 2 heaping tablespoons worth of dough into your hands and form into heaps. Place on a baking sheet.
Bake for 15-18 minutes, or until slightly golden and no longer wet in the center.
Allow to cool before removing from the pan and enjoying!
