Preheat 12-inch cast iron skillet on stove over medium-high heat with butter, coconut oil, or vegetable oil
Once preheated (flick some water into the pan, it should sizzle!), sear your chicken thighs in your skillet for 3-4 minutes on each side, or until golden
Reduce heat to low, add remaining ingredients to the skillet, cover, and allow to simmer for an additional 7 minutes
