Ingredients
1 1/2lbbonelessskinless chicken thighs
2shallots
3stalks celery
6large carrots
2tspturmeric
1/2cupparsley
2quartslow sodium chicken broth
1tsppepper
2tspsalt
2tbspolive oil
Instructions
Prepare vegetables by dicing them finely and roughly chopping parsley.
Prepare chicken by removing the fat and cubing into 1 inch pieces
Add olive oil, salt, pepper, carrots, shallots, and celery to a large stockpot over medium heat and cook until onions are tender and translucent, stirring frequently, about 5-6 minutes
Add chicken and sear each side, stirring occasionally for 9-10 minutes.
Add chicken broth and remaining ingredients to the stockpot, and bring the soup to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until carrots are tender. Enjoy!
