Dessert Sweet Potatoes with Blackberry Compote
These stuffed sweet potatoes will satisfy your sweet tooth in no time!

Ingredients
- 2 large sweet potatoes
- 1/2 cup farmer's cheese use our recipe, buy your own, or replace it with ricotta or goat cheese
- 2 cup blackberries
- 1/2 tsp stevia
Instructions

Stab sweet potatoes with fork multiple times

Microwave for about 5-6 minutes, or until they are soft, turning halfway through

In the meantime, place blackberries and stevia in a small saucepan over medium heat

Stir and smash berries until they reach a sauce-consistency - about four minutes

Slice open sweet potatoes - be careful if they're still hot! - and mash the insides with a fork

Stuff with cheese and top off with compote
