Winter Citrus Salad
There are a few things I miss in the winter more than fresh, bright, and vibrant flavors. That's why I love this Winter Citrus Salad! It's everything winter takes away, colorful foods, juicy fruit, and crisp, nourishing salads. It's ridiculously simple to make and incredibly delicious.
Ingredients
- 12 oz baby arugula
- 2 small Mandarin oranges
- 1 grapefruit
- 1 avocado
- 3 tbsp olive oil
- pinch of salt
Instructions

Prepare citrus by cutting off each end and carefully slicing off the peel. Try to remove as much of the white fibrous peel as you can while saving as much of the fruit as possible.

Once peel is removed, carefully slice out each wedge using their membranes as a guide to cut along.

Slice avocado in half and remove stone. Remove skin and slice avocado into even and thin wedges

Gently toss citrus, avocado slices, arugula, and oil together, add a pinch of salt and enjoy right away!
