Warning, these babies are MOIST. I know many of you do not like that word… but there is no way around it. These Banana Bread Blondies are ooey, they are gooey, they are loaded with pools of chocolate, and they are MOIST. They’re dang delicious, and while I have been loving the dedication to baking banana bread lately, I just didn’t need another loaf in my freezer. Nevertheless, ripe bananas don’t last forever, and they must be baked!

I was inspired to make something a little different that the fluffy loaves that are taking over the internet right now. With the goal of creating something undeniably different in texture, these babies delivered. I highly recommend enjoying them warm over some vanilla ice cream for something completely decadent. Additionally, they are absolutely delicious on their own as well.

So what are we waiting for?! Let’s get cooking!

 

Ingredients

3 large ripe bananas
2 eggs
2 tbsp coconut oil
1 cup almond flour
½ cup chocolate chips
½ cup brown sugar
1 tsp baking powder
½ tsp salt

 

Directions:

  1. Mash bananas in a large mixing bowl until smooth. Add eggs, coconut oil, and brown sugar and mix well.
    1. Note: If your coconut oil is hard, melt it in the microwave to soften for about 15 seconds.
  2. In a separate bowl, sift together almond flour, salt, and baking powder.
  3. Combine the wet and dry ingredients and mix until combined.
  4. Pour into an 8 x 8 inch baking dish lined with parchment paper, and bake for 45-50 minutes.
    1. Note: this will brown on top, but don’t worry, they aren’t burnt! Use a knife to poke the center of the bars to determine if they are done. Poke the blondies in the center. They are done if the knife comes out clean!
  5. Allow to cool to warm before removing from the pan and slicing into 12 pieces. Enjoy!
