This Browned Butter Granola is everything your granola dreams are made of. Lightly sweet, balanced perfectly with salted nuts, crunchy quinoa, and toasty chewy oats, all carrying the warm and nutty flavor of browned butter. I’ve been loving the versatility of this granola. It’s so good on its own that you can simply eat it with a splash of cold milk, but it’s also a delicious crunchy topping for smoothie bowls, yogurt bowls, or even as a chewy surprise in your salads. I’m all about a sweet, fun surprise on my salad, anyone else?

 

This recipe is perfect for those nights when you just want cereal for dinner, if you’re sick of paying an arm and a leg for a high quality bag of granola, or if you’re just looking for a new project to try!

Ingredients

5 tbsp salted butter
¼ cup whole wheat flour
2 tbsp brown sugar
¼ cup honey
1 cup rolled oats
½ cup quinoa
¾ cup mixed nuts, pecans and pistachios
Pinch of sea salt

 

Directions

  1. Preheat oven to 300 F.
  2. In a medium saucepan on medium-high heat, add butter. All to melt and cook until golden brown, about 3-4 minutes.
  3. In a large bowl, combine all ingredients, and stir. Mix the granola up until everything is well coated with the wet ingredients.
  4. Spread the granola onto a large baking sheet lined with parchment paper. Create a single mass that’s about 1/2 inch thick throughout. This will allow for larger clusters.
  5. Bake for 25-30 minutes, or until granola is nice and toasty. Timing will vary based on your baking sheet, so watch the granola closely during this time frame. For example, if you have a dark baking sheet, your granola will likely be done at 25 minutes.
  6. Allow to cool completely before breaking up into clusters. Enjoy your Browned Butter Granola fresh, or store it in your pantry in a sealed container for up to 2 weeks.
