Let’s face it, we are in the midst of a nasty, cold winter. We need warm, cozy, and satisfying meals to get us through! This Spicy Sweet Potato and Sausage Soup is up for the challenge. It’s loaded with spicy, sausage-seasoned vegetarian beefless ground, balanced with tender sweet potatoes, and boosted with nourishing, fiber-filled kale.

This one pot meal makes for easy clean-up. Not to mention, this recipe makes four servings, so it’s great for meal prep or to feed the family.

Veggies

This recipe calls primarily features sweet potatoes and kale. The sweet potatoes off-set the heat from the spicy sausage, so I consider them critical. The kale adds earthy, fibrous greens for a nutritional boost. That being said, any green that you have on hand will do. Add spinach, arugula, or spring mix if it’s all you have. Even your frozen greens will work here!

Meat

This is a vegetarian dish, and, per usual, I am using my favorite ground meat substitute, Trader Joe’s Beefless Ground Beef. It can be found in the refrigerated deli section at TJ’s near the tofu and other vegan/vegetarian substitutes. If you don’t have a TJ’s near you…well, I’m sorry to hear that. Here are some other meat alternatives that will be great for this recipe!

  • Beyond Meat, Impossible Foods, Hungry Planet, or Lightlife ground meat alternative that require cooking. Simply brown this meat alternative before moving forward with the recipe as written.
  • Crumbled firm or extra firm tofu. Press the tofu for five minutes to release excess moisture, then pat dry. Crumble by hand and follow the recipe as written, adding the tofu when the beefless ground is added. This alternative may be soft and soggy, but if it’s all you have one hand, go ahead and use it!
  • Crumbled Seitan or meatless crumbles like Morning Star, Gardein. Simply follow the recipe as written, adding this alternative in place of the beefless ground beef.
  • Beans. Use your favorite beans like white beans, chickpeas, or lima beans. Strain and rinse your beans before adding them to the soup in place of the beefless ground beef.

Ingredients

Spicy Vegetarian Sausage

  • 12 oz beefless ground
  • 1 tsp paprika
  • 1 tsp basil
  • ¾ tsp red pepper flakes
  • 3/4 tsp oregano
  • 1/2 tsp sea salt
  • ½ tsp black pepper

Soup

  • 6 cloves garlic
  • 1 large yellow onion
  • 1 large sweet potato
  • 3 cup kale
  • 2 quart vegetable broth
  • ½ cup dry white wine
  • 3 tbsp olive oil
  • 2 tbsp tomato paste

Instructions

    1. Prepare vegetables. Mince the garlic, slice the yellow onion into thin wedges, cube the sweet potato, and roughly chop the kale.
    2. Preheat a large Dutch oven or pot with oil to medium heat. Once the oil is preheated, add the yellow onion. Stirring occasionally, cook until tender, about 4-5 minutes.
    3. Once tender, add the garlic, and cook until fragrant, about 1 minute. Add the tomato paste, and cook until darkened in color, about 2 minutes. Add the wine, and cook until reduced in volume by about half.
    4. Prepare the sausage. Add the paprika, basil, red pepper flakes, oregano, sea salt, black pepper, and beefless ground. Stirring frequently, toss until evenly seasoned and lightly browned, about 3-4 minutes.
    5. Add the sweet potato, kale, vegetable broth, and bring the mixture to a steady simmer. Cover, and cook for 8-12 minutes, or until the sweet potatoes are fork tender. Enjoy within five days!
