Blueberries are back in season – thank goodness! – and I am all over it. I love blueberries so dang much. These Blueberry Crumb Bars are almost too good to share.
Here’s what you’ll need…
Crust
2 cup roasted cashews
6 large dates, pitted
2 Tbs coconut oil, melted
1 Tbs maple syrup
Filling
2 cup fresh or frozen blueberries
Crumble
1 cup rolled oats
1/4 cup almond flour
2 Tbs coconut oil
2 Tbs maple syrup
Directions:
- Preheat oven to 375F
- Blend crust ingredients in food processor until forms a sticky consistency
- Press crust into an 8×8 inch pan lined with parchment paper (leave enough parchment overflowing, so you can use it to remove the bars from the pan)
- Add blueberries over the crust evenly
- Combine crumble ingredients together in a separate bowl and sprinkle over the top
- Bake for 25 minutes
- Allow to completely cool before removing from pan and cutting into 16 bars
