Blueberries are back in season – thank goodness! – and I am all over it. I love blueberries so dang much. These Blueberry Crumb Bars are almost too good to share.

 

Here’s what you’ll need…

Crust

2 cup roasted cashews

6 large dates, pitted

2 Tbs coconut oil, melted

1 Tbs maple syrup

 

Filling

2 cup fresh or frozen blueberries

 

Crumble

1 cup rolled oats

1/4 cup almond flour

2 Tbs coconut oil

2 Tbs maple syrup

 

Directions:

  1. Preheat oven to 375F
  2. Blend crust ingredients in food processor until forms a sticky consistency
  3. Press crust into an 8×8 inch pan lined with parchment paper (leave enough parchment overflowing, so you can use it to remove the bars from the pan)
  4. Add blueberries over the crust evenly
  5. Combine crumble ingredients together in a separate bowl and sprinkle over the top
  6. Bake for 25 minutes
  7. Allow to completely cool before removing from pan and cutting into 16 bars
