These Blueberry Crumb Bars are so delicious and perfect for a summertime treat. They may even be too good to share!

Ingredients
Crust
- 2 cup roasted cashews
- 6 large dates pitted
- 2 Tbs coconut oil melted
- 1 Tbs maple syrup
Filling
- 2 cup fresh or frozen blueberries
Crumble
- 1 cup rolled oats
- 1/4 cup almond flour
- 2 Tbs coconut oil
- 2 Tbs maple syrup
Instructions

Preheat oven to 375F

Blend crust ingredients in food processor until forms a sticky consistency

Press crust into an 8x8 inch pan lined with parchment paper (leave enough parchment overflowing, so you can use it to remove the bars from the pan)

Add blueberries over the crust evenly

Combine crumble ingredients together in a separate bowl and sprinkle over the top

Bake for 25 minutes

Allow to completely cool before removing from pan and cutting into 16 bars
