Taco Tuesday. Tostada Tuesday. Whatever you want – let’s do it up! I am a big fans of savory breakfasts, and I usual resort to making omelettes with some eggs and whatever veggies I have around – well, I say omelettes, but they often end up as scrambled eggs…

 

Anyway, today I decided to make something special, and I am so glad I did because these are fantastic!

 

Here’s what you’ll need:

4 eggs

4 corn tortillas

1 cup pineapple, diced

1 ear of corn, shaved

1/2 bell pepper, diced

1/4 cup yellow onion, diced

1/2 jalapeno, finely diced

1 avocado, sliced

coconut oil for frying

 

Directions:

  1. Coat frying pan with coconut oil over medium-high heat
  2. Fry Tortillas in coconut oil until they become golden, flipping to fry each side
  3. Place on paper towels and gently pat off excess oil
  4. In a separate saucepan combine pineapple, corn, bell pepper, onion and jalapeno over medium heat and allow to cook until veggies soften
  5. Fry up four eggs however you please – we chose sunny-side up with soft yolks
  6. Assemble tostadas as follows – corn tortilla, warm salsa, egg, sliced avocado

 

If you’re feeling fancy…

Top it off with some cheese or Greek yogurt (favorite sour cream substitute)

or

Add some hot sauce

or

Add some beans for added fiber!
