A few things you should know about me:

  1. I love energy bites for snacks and always keep my refrigerator stocked with at least one variety for a mid-afternoon snack or a late night craving.
  2. I am always making my own almond milk
  3. I HATE wasting food.

These Dirty Chai Energy Bites are basically the summation of those three tidbits. One afternoon, I was making my homemade almond milk. I was about to make my go-to almond pulp recipe (Almond Energy Bites), but I decided to mix it up a bit. I mean, you can’t go wrong with chai, espresso, and chocolate, am I right?

 

Here’s what you’ll need…

2 cups almond pulp, pressed dry*

1 Tbs ground espresso beans

1/4 cup dark chocolate chips (I like the minis)

1/2 cup peanut butter or almond butter

8 large dates, blended into paste

1/2 cup raw honey

Chai Spices

1 tsp cinnamon

1/2 tsp cardamom

1/4 tsp ground ginger

1/8 tsp allspice

1/8 tsp nutmeg

 

Directions:

  1. Combine all ingredients to form a dough
  2. Chill mixture for 30 minutes, or until firm enough to shape
  3. Form into balls
