Winters in Minnesota are long, but delicious new recipes like this Chicken & Mushroom Skillet make it easier to bear (ALMOST). So long. Soups, casseroles, and comfort meals are on repeat for…like…6 months out of the year. My favorite tricks to keep things interesting during this long season:
1. Use tons of herbs or spices, they can change up the same ingredients instantly
2. Shop for what’s in season – although winter produce isn’t always interesting or overabundant, eating a handful of berries in the middle of January usually leaves me puckering through every bite. Cooking seasonally allows me to opt for local offerings that will be fresh and tasty
This Chicken & Mushroom Skillet is loaded with fresh herbs that will transform boring old chicken into a savory dish.
Here’s what you’ll need:
1.5 lbs chicken thighs
10 oz mushrooms, sliced
1/2 cup onion, chopped
1 cup chicken stock
2 tsp fresh thyme
2 tsp fresh rosemary
1 clove of garlic, minced
1/2 tsp salt
1/2 tsp pepper
Oil or butter of choice
Directions:
- Preheat 12-inch cast iron skillet on stove over medium-high heat with butter, coconut oil, or vegetable oil
- Once preheated (flick some water into the pan, it should sizzle!), sear your chicken thighs in your skillet for 3-4 minutes on each side, or until golden
- Reduce heat to low, add remaining ingredients to the skillet, cover, and allow to simmer for an additional 7 minutes
Serving Note: serve on a bed of rice or orzo
