Don’t bother with the same old boring sandwich or salad this week for lunch. We a huge meal prep people, but we usually get stuck prepping the same salads with shredded chicken or batch-cooked grain every single day. That’s why we like to mix it up and create new and fun meals that are just as easy to prep and provide use with the colorful micronutrients we need as well as a great balance of proteins, fats, and carbs. This Taco Casserole is loaded with flavor, and it will provide you with a quick lunch option for the whole week.

 

Here’s what you’ll need:

1 lb 93% lean ground turkey

1/2 T chili powder

1/2 Tbs cumin

1/4 Tbs garlic powder

1/2 tsp ground corriander

1/2 tsp cayenne pepper

1 tsp sea salt

15 oz can black beans

1 red bell pepper
1 cup quinoa

1/2 cup shredded cheddar cheese

6 oz can tomato paste

 

Directions:

  1. Preheat oven to 350F
  2. Cook quinoa in water as directed
  3. Brown ground turkey with seasonings listed above
  4. Toss in chopped red bell pepper
  5. Once quinoa is cooked, stir in black beans and tomato paste
  6. Layer quinoa mixture into 9×13 pan
  7. Add a second layer of the cooked ground turkey and red pepper
  8. Top with cheese
  9. Bake at 350F for 15 minutes
