
Chicken & Vegetable Soup is such a winter classic. It’s warm, it’s cozy, and it’s great for meal prep! Don’t miss this winter classic, it’s delish.
Here’s what you need:
1 1/2 lb boneless, skinless chicken thighs
2 shallots
3 stalks celery
6 large carrots
2 tsp turmeric
1/2 cup parsley
2 quarts low sodium chicken broth
1 tsp pepper
2 tsp salt
2 tbsp olive oil
Directions:
- Prepare vegetables by dicing them finely and roughly chopping parsley.
 - Prepare chicken by removing the fat and cubing into 1 inch pieces
 - Add olive oil, salt, pepper, carrots, shallots, and celery to a large stockpot over medium heat and cook until onions are tender and translucent, stirring frequently, about 5-6 minutes
 - Add chicken and sear each side, stirring occasionally for 9-10 minutes.
 - Pour chicken broth and remaining ingredients to the stockpot, and bring the soup to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until carrots are tender. Enjoy!
