These Lemon Coconut Bites are perfect for my mid-afternoon snack-attack, pre-workout pick-me-up, or late night sweet tooth. They’ve got the perfect balance of tart and a touch of sweet. These sugar-free snacks will be gobbled up before you know it!
Here’s what you’ll need…
2 scoops vanilla protein powder of choice
1 cup shredded coconut, unsweetened
1/2 cup coconut oil
1/2 lemon, juiced
1 tsp lemon zest
Directions:
- Melt coconut oil
- Combine all ingredients and form into dough
- Form into 20 equally sized bites
- Chill
