These Lemon Coconut Bites are sweet, refreshing, and perfect for on-the-go snacking.

Blame it on my spring fever, but my kitchen is fully stocked with lemon and coconut and pineapple and all things tropical, refreshing, and bright. These Lemon Coconut Bites are perfect for my mid-afternoon snack-attack, pre-workout pick-me-up, or late night sweet tooth. They’ve got the perfect balance of tart and a touch of sweet. These sugar-free snacks will be gobbled up before you know it!

 

Here’s what you’ll need…

2 scoops vanilla protein powder of choice

1 cup shredded coconut, unsweetened

1/2 cup coconut oil

1/2 lemon, juiced

1 tsp lemon zest

 

Directions:

  1. Melt coconut oil
  2. Combine all ingredients and form into dough
  3. Form into 20 equally sized bites
  4. Chill
