These Pesto Chicken Meatballs are great for meal prep too! Double the recipe, and enjoy these meatballs all week long. I have tested this recipe with a handful of store bought pesto options, and they have all turned out well, so feel free to use whatever you can find or your favorite pesto. Whatever you choose, this protein-packed recipe is the star of your meal and so simple that you may just want to add it to your meal prep rotation! Enjoy it alongside fresh pasta, zoodles, or simply with a side of veggies to complete your lunch or dinner.

Ingredients

1 lb ground chicken (turkey or beef is okay too, but my favorite is chicken!)

1 small shallot

3 tbsp pesto

½ tsp salt

Oil for pan

 

Directions

  1. Finely dice shallot
  2. Combine ground chicken, shallot, pesto, and salt and mix well.
  3. Preheat pan to medium-high heat and add oil to lightly coat the bottom of the pan.
  4. Form into approximately golf ball sized balls and place on the hot pan. 
  5. Brown each side for about 5-6 minutes per side, or until internal temp reaches 165 degrees F.
  6. Enjoy your homemade pesto chicken meatballs with a side of veggies or on a bed of pasta!
