I love fresh lemon in the spring and summertime. It’s so refreshing and delicious, I can’t help myself! These Raw Lemon Bars are perfect for brightening up your day.
Here’s what you’ll need…
Crust
2 cup cashews
10 large dates, pits removed
1/4 cup coconut oil, melted
Glaze
1/4 cup coconut oil, melted
4 Tbs raw honey
1/2 lemon, juiced
1/2 tsp lemon zest
Directions:
- Blend cashews and dates in food processor until pea-sized pieces form
- Press the crust into an 8×8 inch square pan and chill in refrigerator
- In the meantime, combine all ingredients for the glaze and whisk until homogeneous mixture forms
- Pour the glaze over the chilled crust and return to refrigerator or freezer and allow to solidify before enjoying
- Store in the refrigerator – if they last that long 😉
