I love mild and leafy vegetables like bok choy because they can sop up all sorts of glazes and sauces, and they truly are the perfect vehicle for serious flavor. And this sauce has got it all, so you’re going to want to dig in fast! It’s sweet, it’s savory, and it has just the right punch of heat. Serve this with white rice or soba noodles, and a protein of choice and dig in!

Ingredients

2 baby bok choy heads

½ cup veg broth

¼ cup soy sauce

3 cloves garlic

2 tsp chili paste

½ tsp fresh ginger, ground

Sesame seeds for garnish

Directions:

  1. Preheat a medium saucepan to medium-high heat.
  2. Quarter bok choy along the stems and add to the hot pan.
  3. In a small mixing bowl, whisk together the vegetable broth, soy sauce, garlic, chili paste, and ginger. Pour over the bok choy.
  4. Cover and steam for 4-5 minutes, until just tender. Garnish with sesame seeds.
  5. Remove from pan and enjoy your bok choy with chili ginger sauce warm!
    1. Note: this dish is great over white rice or soba noodles because it is the best carrier for any extra sauce! Add your protein of choice, and you’ve got a full meal!
