We love making our own almond milk. We like being able to manipulate the richness and flavors without worrying about the additives that are often found in the stuff from the store. When we feel like chocolate almond milk, we don’t want to deal with 20 plus grams of added sugar at the same time. Plus, we are the weirdos who find cooking and recipe creation meditative and fun. This Rich & Creamy Toasted Coconut Almond Milk (wow, that’s a mouthfull) is perfect for our morning coffee or just for sippin’ on. Plus, it’s super simple to make.
Here’s what you’ll need:
1 cup raw almonds
1/2 cup toasted coconut flakes
4 cups water

Directions:
- Soak almonds overnight in enough water to cover them
- Add soaked almonds and their water, coconut and remaining water to a high-powered blender
- Blend for a couple of minutes, or until solids have formed into a pulp and water has become white and creamy
- Strain out the pulp using your nut milk bag and squeeze out excess water (be sure to save the pulp and use it in your energy balls)
- Store for up to a week, shaking before each use
