We like to believe we are reasonable people. We want snacks that are both healthy AND delicious, and we don’t think that’s too much to ask. But it can be tricky to find snacks that satisfy our criteria, and that’s why we find ourselves creating our own snack recipes all of the time! Last weekend we carved some pumpkins for Halloween, and we were left with slimey little pumpkin seeds that are actually loaded with nutritious healthy fats that are perfect for our continuous quest for a healthy and delicious snack. This recipe will kick your cravings to the curb and satisfy your sweet tooth. Give it a try!
Here’s what you’ll need:
1 cup pumpkin seeds
1 tsp pumpkin pie spice
2 tsp maple syrup
2 Tbs sea salt, plus a sprinkle extra
Directions:
- Preheat oven to 325F
- Boil pumpkin seeds in sea salt and water for ten minutes
- Drain seeds and toss them in pumpkin pie spice, maple syrup, and a sprinkle of sea salt
- Roast for 25 minutes, or until seeds are nice and crunchy
