This dish is inspired by Korean Strawberry Milk which is commonly made of fresh strawberries, sugar, and milk. It’s basically a creamy, dreamy, sweet, and fresh drool-worthy treat! The base of our chia seed pudding is a modified strawberry milk that features a sweet blend of fresh strawberries, plant-based milk, and honey.

Milk
This recipe calls for coconut milk, but you can swap this for your favorite milk alternative. Because I also add honey, I recommend opting for an unsweetened milk alternative. You can always add fresh fruit, or a quick drizzle of honey at the end if the pudding is not sweet enough for you!
Honey
If you are vegan or don’t like the taste of honey, swap the honey for maple syrup or cane sugar in the same volume. You can also add a small pinch of stevia, but be careful not to overdo the stevia because it can leave quite an intense aftertaste!
Fresh or Frozen?
If you’re finding this recipe in the middle of winter when fresh strawberries are wildly expensive and not at their peak, no worries! This recipe has been tested with both fresh or frozen strawberries. Simply, allow your frozen strawberries to thaw slightly before using for best results.
Serving
Serve your chia seed pudding as is, add fresh fruit, nuts, granola, nut butter, or maybe all of the above! Treat your chia seed pudding like the base of a parfait, and load it up with your favorite nutrient-rich toppings.

1 ¼ cup strawberries
2 cup milk of choice
6 tbsp chia seeds
1 tbsp honey
1 tsp vanilla extract
Directions:
- Add strawberries and milk to a blender or food processor, and blend until smooth.
- Note: you can also use a jar and immersion blender for this step!
- Transfer the milk to a large jar, add honey, chia seeds, and vanilla extract. Stir or cover and shake. Set aside for at least and hour to expand.
- Enjoy within 4 days!
