
There’s something so comforting about a warm, fresh oatmeal bake. I love to make them as meal prep for a quick breakfast or brunch with the family because they always love them . There are so many flavor combinations, and just a few simple, whole ingredients can make a spectacular meal. I always reach for rolled oats, a couple of eggs, and a milk of choice for the base. To add some fun, I opt for whatever is in season. For this Strawberries & Cream Oatmeal Bake, I chose seasonal, fresh, juicy strawberries, and a rich, full-fat coconut milk to make a bake that could easily pass as a dessert.
Here’s what you’ll need:
2 cups strawberries
2 cup rolled oats
1 can full-fat coconut milk
3 eggs
1/4 cup raw honey
Directions:
- Preheat oven to 350F
 - Combine all ingredients in a large bowl
 - Pour into a greased 8x8inch pan
 - Bake for 25-30 minutes
 - Top with additional fresh berries, and some coconut whipped cream
