I enjoyed this Raw Vegetable Salad with a Sesame Ginger Dressing. The salad is great, but the dressing is the true star of the show! The raw vegetable salad included shaved zucchini, carrots, and edamame. The freshness of the raw vegetables was the perfect pairing with this flavorful dressing! I topped it with salty cashews and scallions.

This is my favorite way to enjoy this dressing, but I encourage you to enjoy it on a leafy salad, a raw veggie salad with your favorite vegetables, or however the heck you want! The possibilities and your creativity can take their shot!

I love this recipe because it’s simple, it packs a serious flavor punch, and it’s well balanced. It features salty soy sauce, punchy rice vinegar, sweet and smooth honey, spicy ginger and chili paste, and nutty sesame oil. It’s incredibly easy to whisk together, and it’s not your average, boring vinaigrette.

Ingredients

2 tbsp soy sauce, or coconut aminos
1 tbsp honey
2 tsp rice vinegar
2 tsp fresh ginger, minced
1 tsp sesame oil
1 clove garlic, minced
1/2 tsp chili paste

Directions:

  1. In a small bowl, blender bottle, or mason jar, combine all ingredients and whisk or shake until combined.
  2. Enjoy your sesame ginger dressing over your salad, and store for up to two weeks

Note:

As I mentioned above and as pictured, I enjoyed this recipe over a raw vegetable salad, so here’s a little bonus recipe for you!

I simply shaved one small zucchini with a vegetable peeler, added half a cup of shredded carrots and half a cup of edamame (shelled). Then I drizzled about 1-2 tablespoons of this dressing over the top and garnished it with one small scallion, a small handful of cashews, and a sprinkle of sesame seeds!
