Spice up your meal prep with this super simple and versatile recipe that's packed with lean protein

Meal prepping for the week can be monotonous and boring, and most of the time, I end up making the same thing over and over again. This Super Simple Shredded Chicken is loaded with flavor, and it’s totally versatile. I can dig into this chicken in a salad, on some corn tortillas, in enchiladas, or as their own main entree. You only need five ingredients, so what are you waiting for?

 

Here’s what you need:

2 lb chicken breasts

7 oz can diced green chiles (as spicy as you like!)

2 Tbs chili powder

1 1/2 Tbs cumin

1 1/2 tsp salt

 

Directions:

  1. Add all ingredients to your pressure cooker, and cook it on high for 25 minutes

or

  1. Add all ingredients to your slow cooker, and cook it on high for 4 hours

2. Once your chicken is done, shred it with two large forks, and serve it on tacos, in enchiladas, on a salad, in a breakfast burrito, or on some sweet potato nachos.
