If you’re looking to reduce your meat consumption, need a new meatless Monday idea, are already living a plant-based diet, or if you just love tacos, these Vegan Jackfruit Carnitas are here for you! Let’s face it, we could all use a new and exciting recipe in our go-to meal rotation! I recently started experimenting with jackfruit, and I’m so thrilled with how my recipes have turned out that I need to refine and share my current favorite application!
I love jackfruit for a few reasons:
- Jackfruit provides a tender texture and mild flavor, making it perfect for a meat substitute that resembles a pulled pork.
- Jackfruit is super affordable and can be found canned in most grocery stores
- Because jackfruit is canned, it is non-perishable and can last in your pantry for quite some time!
An important thing to note is that although jackfruit is a great meat-like substitute, it is not a protein-rich food, so I highly recommend boosting whatever meal you choose with plant-powered protein to round out your meal!
Load this plant-based meat substitute up with flavorful spices and get cooking. These babies will be ready in less than 15 minutes! Enjoy them in tacos loaded with veggies, beans, rice, salsa, avocados, or whatever taco fixings you desire. They’re great in burrito bowls or a taco salad as well!
So what are you waiting for?! Let’s get cooking!
