Few things are as cozy and comforting as a warm and creamy bowl of rice pudding. This Vegan Rice Pudding is ready in a flash and made with full fat coconut milk, so you don’t miss any of the decadence typically found in a traditional recipe that may include heavy cream and butter.
I can think of few things better than a warm, cozy, sweet bowl of rice pudding. It’s so dreamy! When testing this recipe, I decided to go full force with creamy full fat coconut milk and coconut cream! I didn’t want to miss out on the decadence found in the traditional dish. I also recommend that you add extra coconut oil or water to your rice pudding when it comes to reheating the dish to maintain the creamy consistency!
If you’re a fan of raisins in your rice pudding, feel free to add ’em! I also recommend topping this treat off with roasted pecans for added crunchy texture and to balance the sweet with some salt. Also, feel free to swap the brown rice for whatever variety of rice you have on hand. I personally like the bite that brown rice maintains even after it is fully cooked, but if you’re looking for something softer and smoother, white rice is a great swap!
Ingredients
2 cup brown rice
2 can coconut milk, full fat
1 can coconut cream
2 tsp cinnamon
¼ cup maple syrup
¼ cup brown sugar, packed
Directions
- Combine all ingredients in a pressure cooker and stir until rice is submerged and brown sugar has dissolved.
- Seal pressure cooker and cook on high for 12 minutes. If your pressure cooker has a rice setting, use the brown rice setting.
- Allow pressure cooker to release naturally for at least 10 minutes before removing the lid and enjoying your vegan rice pudding warm.
