Simple, fresh ingredients. My favorite recipes are the ones that have only the ingredients they need. Each one serving a purpose, each one easily recognized in each bite. No excess nonsense, no overwhelm with a mish mash of flavors. That's why I love bruschetta.

Ingredients
1french baguette
4tbspolive oilplus more to brush on bread
2tbspfresh basil
1tspbalsamic
1cupcherry tomatoes
Generous pinch of salt
Instructions
Preheat oven to 375F
Slice cherry tomatoes into bite sized pieces and chopped basil leaves.
In a medium sized bowl, gently toss tomatoes, olive oil, basil, balsamic, and salt.
Slice baguette into 1 1/2 to 2 inch pieces. Gently brush each slice with additional olive oil and spoon the bruschetta mixture onto the bread.
Bake for 6-7 minutes, or until heated through, and tomatoes have begun to soften.
