My favorite recipes are the ones that have only the ingredients they need. Each one serving a purpose, each one easily recognized in each bite. No excess nonsense, no overwhelm with a mish mash of flavors. That’s why I love bruschetta.

Bruschetta features bright and juicy tomatoes, high quality extra virgin olive oil, fresh and sweet basil, punchy balsamic, and just a dash of salt to create the perfect bite every single time. All of these ingredients are carried on a gorgeous slice of a fresh baguette – homemade or store bought is your choice, but I recommend heading to a local bakery to pick up a good one! One of my favorite snacks is bruschetta, especially during the summertime when tomatoes are in their peak season! Simple, classic combinations like this should always be appreciated.

As a recipe developer, I find that it’s so easy to get wrapped up in the idea of trying to create something new and unique, throw all of the flavors together, and make something special! There’s a lot of noise in the food blogging world, and it often creates pressure to stand out, be loud and different in order to be noticed! However, my favorite recipes to develop are the ones that maybe don’t seem so wild and interesting, but when you take that first bite, your eyes light up, and your taste buds sing. Everything has a purpose, everything is accounted for, and everything that is present in that recipe is appreciated.

Ingredients

1 french baguette
4 tbsp olive oil, plus more to brush on bread
2 tbsp fresh basil
1 tsp balsamic
1 cup cherry tomatoes
Generous pinch of salt

 

Directions:

  1. Preheat oven to 375F.
  2. Prepare toppings, and slice cherry tomatoes into bite sized pieces and finely chop basil leaves.
  3. In a medium sized bowl, gently toss tomatoes, olive oil, basil, balsamic, and salt until well-combined.
  4. Slice baguette into 1 1/2 to 2 inch pieces. Gently brush each slice with additional olive oil and spoon the bruschetta mixture onto the bread.
  5. Bake for 6-7 minutes, or until heated through, and tomatoes have begun to soften.
  6. Serve immediately and enjoy warm!
