These Baked Brie Bites make for the perfectly balance appetizer every bite! This one is so simple too, Puff pastry + Brie + fresh cranberries

Each bite features tart and bright cranberries, drowning in smooth and creamy brie, and wrapped in a light and flaky puff pastry… My new favorite holiday appetizer is three simple ingredients and takes minimal assembly. This recipe is so simple, but it’s so delicious. I also love these bites because they really showcase the gorgeous tartness of fresh cranberries! My whole life I didn’t like cranberries because I had only had them in the canned, jammy variety at Thanksgiving. I hated them! Oof! We are not doing cranberries the justice that they truly deserve! This is one of my favorite ways to change that. Another one is my Cranberry Pear Tart!

Here’s what you’ll need:

1 10×15 inch puff pastry, thawed

1/2 cup fresh cranberries, roughly chopped.

6 oz triple cream brie

 

Directions:

  1. Preheat the oven to 375F
  2. Bring out a medium muffin tin and lightly grease it.
  3. Roll puff pastry into a pinwheel. Slice into 12 one inch pieces, and stretch slightly to fit the bottom of the muffin tin.
  4. Slice brie into twelve even pieces and place on each puff pastry. Repeat with cranberries
  5. Bake for 14-16 minutes, or until puff pastry is puffed, cranberries have burst, and brie is nice and melted. Enjoy these Baked Brie Bites warm!
