Low-carb is gaining some serious traction, and we are on board. We generally prefer a high-protein and high-fat diet over lots of carbs. We tend to eat intuitively and try to listen to what our bodies want and have found that we feel the most satiated and happy with a diet lower in carbs – that being said, we in no way are hatin’ on carbs! Your body needs them, but for those days when you’re cutting down on carbs, these Cauli Tots will keep the cravings away:

Ingredients:

1 head of cauliflower
1 egg
1/4 cup cheese
1/4 cup finely chopped onion
Salt and pepper to taste (be generous)
1/4 tsp red pepper
1/2 tsp garlic (feel free to use fresh garlic)

 

Directions:

  1. Preheat oven to 375F
  2. Blend the cauliflower (but don’t worry about getting it too fine, it will bind better if it’s a little chunky)
  3. Drain out excess water
  4. Then mix in the remaining ingredients and form into desired sized tots – we like to squeeze them a little to remove any excess water and to make sure they are tightly bound, so they don’t fall apart when I eat them
  5. Bake on a well greased cookie sheet for about 30 minutes.
