Buffalo Chicken is one of my go-to meal-prep staples. Most meal preps for me include some form of shredded chicken whipped up in a pressure cooker or a slow cooker (see my Super Simple Shredded Chicken for another meal-prep-friendly recipe). This allows me to have prepped protein on hand for days and evenings when I’m so busy that I don’t think about eating until I’m so hungry that I grab anything that’s in the house and convenient! This Buffalo Chicken is super versatile! Enjoy it cold in lettuce or tortilla wraps, topping off a salad, or warmed and enjoyed with steamed veggies and roasted potatoes.
You just need FOUR simple ingredients!
Here’s what you need…
4 lb chicken breast
3/4 cup hot sauce of choice (I love Frank’s)
2 tsp garlic powder
1 tsp salt
Directions:
- Add all ingredients to a pressure cooker and cook for 35-40 minutes
or
- Add all ingredients to a slow cooker and cook on high for 4 hours or on low for 6-7 hours.
