I wake up every morning with one thing on my mind. It’s coffee. I know I’m not the only one! I am a caffeine queen, a coffee connoisseur, a bean worshiper… some would call me an addict. They would not be wrong, but that’s a conversation for another day. If you don’t consider me an addict, and you actually find yourself relating to the coffee loving, this recipe is for you! These Cafe Mocha Oats are inspired by my coffee obsession, and they feature a full shot of espresso in each serving.
They are multipurpose too! Get your breakfast nourishment, and you will feel fueled and energized for the day. Additionally, you can enjoy these oats warm and fresh, and you can enjoy your leftovers chilled and thick! Each bite of these creamy oats is sprinkled with dark chocolate chips, overflowing with intense and deep espresso flavor, and lightly sweetened with rich pure maple syrup.
What I’m trying to say is, they’re freaking delicious. So, it would be a great idea to double this recipe, and you can enjoy it all week long as a prepped and easy breakfast option, or just follow the recipe as written for a brunch for two option!

Ingredients
1 cup rolled oats
2 cup mylk substitute of choice, or water
½ cup strong coffee or two shots of espresso
¼ cup dark chocolate chunks
2 tbsp maple syrup
Directions:
- Combine oats and milk in a large microwave safe bowl. Microwave for 90 seconds, and keep a close eye to ensure it does not overflow. If you notice overflow starting, stop the microwave, stir, and continue heating. Repeat as needed until the oats are fully cooked.
- Add the espresso, dark chocolate, and maple syrup, and stir the mix-ins in until well-combined.
- Enjoy this dish warm and fresh, or set the oats aside and chill and store for enjoying within the next five days.
- Note: If you are reheating the dish, I recommend adding a splash of milk or water with the oats, so they remain creamy when reheated.
