Let us introduce you to this incredible LOW-CAL, super simple and quick fried rice recipe. You may be wondering “why is it purple?” Well, that’s because we used PURPLE cauliflower! It’s purple because it contains an antioxidant called anthocyanin which is also found in red cabbage, so it’s actually loaded with micronutrients! Some nights, you just feel like digging into some good old chinese take-out. It’s easy, it’s fast, and let’s be honest, it just hits the spot. Unfortunately, it’s not-so-healthy… Try this low-cal version of fried rice the next time you feel those take-out cravings.

 

Here’s what you’ll need:

1 medium head cauliflower
3/4 cup frozen mixed veggies
3 green onion, chopped
1/8 tsp fresh ginger
2 cloves minced garlic
2 eggs
2 Tbs low sodium soy sauce
2 tsp sesame oil

 

Directions:

  1. Rice cauliflower by pulsing in blender until roughly chopped, or grating in food
    processor
  2. Toss onions, garlic, and ginger in sesame oil and allow to sweat for
    a couple of minutes on a hot wok
  3. Scramble two eggs in mixture
  4. Next, toss in grated cauliflower and mixed veggies
  5. Stir around just long enough to let veggies thaw and heat through
  6. Add soy sauce and enjoy!
